Fresh Summer Truffles
The summer truffle has just arrived from Italy. Like its winter cousin, it has a bumpy, brown-black exterior. The interior of a ripened summer truffle is dusky white. Latin Name: Tuber Aestivum Storage: Mushroom make great houseguests. Store in a basket, in a fridge so air can circulate around them. Truffles can also be stored loosely covered, or closed in a jar with whole eggs--the flavor will penetrate the shells and you can eat the truffle eggs without having to slice the truffle. The flavor dissipates rapidly, so use it or freeze it within a few days. Preparation: Don't wash or peel truffles. You need heat to release the musky, earthy flavor of the black truffle: Layer potatoes with truffles, scramble slivers with eggs, tuck slices under the skin of a roasting chicken. For a simple sauce, heat demi-glace and swirl in sliced truffles.
Summer truffle season runs from April to early September. As the market price changes throughout the season, we will adjust our pricing accordingly.

The taste of this truffle is incredibly similar to that of the fresh product. It is easy to prepare them for first courses, meat, canapes or salads.
