Every Sunday families and close friends gather at their 'fare' (home) for lunch and would prepare what we call a 'ma'a Tahiti' (Tahitian), which is cooked in a 'ahima'a' (underground oven). It is the traditional way of cooking a 'ma'a Tahiti'. Many Polynesian islands like Hawaii (which is what you know as a Hawaiian Luau) have used this cooking technique for many years. Even though the techniques are similar, some of the ingredients and the recipes are a bit different in all Polynesian islands as everyone has their own special adaptations of a Polynesian Feast.

"Ma'a Tahiti": In the old days, Tahitians used to prepare and cook their food in a ground oven everyday. They used to dig up a big hole in the earth, burn wood in it and pour volcanic rocks over the wood. Tahitians would then place the prepared food wrapped in banana leaves on the rocks and shoveled the dirt back on top of the oven to cover entirely. The food would cook for about 3 to 4 hours and all the dishes were served together in a buffet style. The food consisted of fish, chicken, beef, pork dishes and vegetables such as 'uru' (breadfruit), taro,'fei' (cooking bananas), sweet potatoes and spinach.
Today the tradition is still very strong. Hotels, restaurants and people in Tahiti still prepare a 'ma'a Tahiti' the way Tahitians used to. But of course most of us prepare our 'ma'a Tahiti' the more conventional way - the kitchen! Create the right atmosphere...
A complete Polynesian Island theme party consists of more than just the food itself. You need to create the right atmosphere and ambience with tropical elements.
Party Decorations in Tahiti:
Back home, the house is more than just a party venue and is a part of the entire 'event'. And like most houses in Tahiti, we have big gardens with a nice variety of tropical plants and flowers.
To get ready for a party or gathering, we usually collect flowers and leaves such as Birds of Paradise, banana leaves, coconut tree leaves, gardenias, hibiscus, Tiares (a type of gardenia and also Tahiti's national flower) and frangipanies.
Bouquets are arranged and placed on tables and surroundings with banana leaves and coconut tree leaves tied around poles over balconies or on the walls around the house. The whole environment becomes very bright, natural and colorful.
The host/ess of the party would usually wear a beautiful hand-made garment with printed tropical flowers all over and the color could be red, blue or green... As long as it is fun and colorful!
The host/ess would also welcome guests with leis (see the bonus My Island Decorations eBook for flower templates and instructions) by placing them around their necks and there would be beautiful Tahitian music (My Island Party Polynesian music) playing in the background as we love music and dance.
